1920′s Fudge

1 c. Granulated Sugar
1 c. Brown Sugar
1/4 c. Light Corn Syrup
1/2 c. Cream (not half & half)
3 oz. Unsweetened Chocolate Squares, grated
1/2 tsp. Vanilla
1/2 c. Walnuts, chopped
Melt butter in a heavy saucepan.
In small mixing bowl combine sugar, brown sugar, corn syrup and cream.
Add to melted butter and bring to a boil stirring constantly with a wooden spoon.
Add grated chocolate stirring constantly to softball stage, 234°F. on a candy thermometer.
Remove from heat and beat with a wooden spoon for several minutes until mixture becomes thick and cream, at least two minutes.
Add vanilla and continue stirring.
Mix in chopped nuts.
Pour into a buttered 8″ x 8″ pan.
When almost cool cut into squares.
