
3 Eggs
2 c. Granulated Sugar
1 c. Oil
3 c. Zucchini, grated
1 c. Dried Apricots, chopped
2 tsp. Vanilla
3 c. Flour
1 tsp. Salt
1 tsp. Soda
1/4 tsp. Baking Powder
1 Tbsp. Cinnamon
1 c. Walnuts or Pecans, chopped
1 tsp. Orange or Lemon Zest (optional)
Beat together eggs, sugar, oil, zucchini and vanilla.
Stir in flour, salt, soda, baking powder, cinnamon, nuts, apricots and optional orange or lemon zest.
Pour into 2 greased loaf pans or 4 mini loaf pans.
Bake 55-60 minutes at 350°F. until toothpick comes out clean.
Mini loaves bake 20-25 minutes until toothpick comes out clean.
