
7 oz. Dried Apricots
1 1/2 c. Water
Crust:
1 c. Flour
1/2 c. Butter
1/4 c. Granulated Sugar
Topping:
1/3 c. Flour
1/2 tsp. Baking Powder
1/4 tsp. Salt
1 c. Brown Sugar
2 Eggs, beaten
1/2 tsp. Vanilla
1/2 c. Pecans or Walnuts, chopped
Powdered Sugar
In a sauce pan cook apricots and water for 10 minutes over medium heat.
Drain well, chop apricots and set aside.
Make crust, using a pastry blender, combine flour, butter and sugar until crumbly.
Pat mixture in bottom of a greased 8″ x 8″ pan.
Bake 20-25 minutes at 350°F. until golden brown.
Remove from oven.
For topping stir together 1/3 c. flour, baking powder and salt.
Whisk in brown sugar, eggs and vanilla.
Stir in nuts and apricots.
Spread mixture over crust.
Bake 25-30 minutes until lightly browned.
Cool completely before cutting into bars.
Roll bars in powdered sugar.
