Baked Apples

1/2 c. Dried Cranberries
1 1/2 c. White Wine
1/4 tsp. Lemon Zest
1/4 c. Cinnamon Sugar
2 Tbsp. Butter
In small bowl combine cranberries and wine, set aside for 30 minutes to allow cranberries to plump.
Wash and core apples being careful not to cut through bottom of apples.
Place apples in a baking dish.
Spoon cranberries into center of apples.
Sprinkle with lemon zest and cinnamon sugar.
Dot with butter.
Drizzle remaining wine over and around apples.
Bake 45 minutes at 375°F.
Serve warm with a scoop of vanilla ice cream.
