Banana Cake

1 2/3 c. Granulated Sugar
1 1/4 tsp. Baking Powder
1 1/4 tsp. Soda
1 tsp. Salt
2/3 c. Shortening
2/3 c. Buttermilk
3 Eggs
1 1/4 c. Bananas, mashed
2/3 c. Walnuts or Pecans, chopped
Preheat oven to 350° F.
Grease and flour pans, 9″ x 13″ or two 9″ or three 8″ round layers.
Measure all ingredients into a large bowl.
Blend 1/2 minute on low speed, scraping bowl.
Beat 3 minutes on high speed.
Pour into pans. Bake oblong size 45-50 minutes, or layers for 35 to 40 minutes.
Frost with butter cream frosting.
Keep refrigerated.
