
Banana Puddin’

1/4 c. Flour
1 Tbsp. Cornstarch
3 Eggs, separated
1/8 tsp. Salt
2 c. Milk
1 tsp. Vanilla
1/4 tsp. Banana Extract
5-6 Bananas, sliced
40-45 Vanilla Wafer Cookies
In top of a double boiler mix 1/2 c. sugar,flour, cornstarch and salt.
Whisk in egg yolks and milk.
Cook over boiling water, stirring constantly, 10-12 minutes until thickened.
Remove from heat, stir in vanilla and banana extract.
Coat bottom of a 1 1/2 qt. casserole with custard.
Cover with a layer of cookies and bananas.
Pour 1/3 of custard over bananas.
Repeat layering until you have three layers, ending with custard.
In glass or stainless steel bowl, beat egg whites until soft peaks form.
Gradually add 1/4 c. sugar, continue beating to stiff peaks.
Spoon meringue on top of banana mixture, spreading to cover entire surface.
Bake 15-20 minutes at 350°F until meringue is golden browned.
Cool slightly before serving.
Refrigerate leftovers.
