
Berry Best Shortcake

3 c. of your favorite fruit such as Strawberries, washed and sliced , Raspberries, Huckleberries, Blueberries, or a combination of berries.
1/2-3/4 c. Granulated Sugar
1/4 tsp. Vanilla
Whipped Cream
Stir together berries, sugar and vanilla.
Let stand 1-2 hours before using.
Shortcake:
1/2 c. Butter, softened
1 1/2 c. Granulated Sugar
3 Eggs
1 tsp. Lemon Extract
1 1/2 c. Flour
1/4 tsp. Baking Powder
1/4 tsp. Salt
1/2 c. Heavy Cream
In mixing bowl cream together butter and sugar.
Add eggs and extract.
In a separate bowl stir together flour, baking powder and salt.
Stir in flour alternately with cream.
Pour into a greased and floured loaf pan.
Bake 50-60 minutes at 350°F
Serve warm or cold.
Cut shortcake into 1″ thick slices.
Top with prepared berries and a dollop of whipped cream.
