
Blackberry Cobbler

4 c. Blackberries
1 1/4 c. Granulated Sugar
3 Tbsp. Flour
1 Tbsp. Lemon juice
3 Tbsp. Butter, cut into small pieces.
Dough:
2 c. Flour
1/4 tsp. Salt
3 tsp. Baking Powder
1 c. Whipping Cream, whipped
1 Tbsp. Granulated Sugar
In a mixing bowl toss together the blackberries, sugar and flour.
Place in an ungreased 9″ baking dish.
Sprinkle with lemon juice and dot with small pieces of butter.
Prepare dough by combining flour, salt and baking powder.
Mix in whipped cream just until mixture is moistened.
Place on floured board and knead gently for 1 minute.
Using fingertips pat dough to 1/2″ thickness.
Place dough on top of berries.
Sprinkle dough with tablespoon of sugar.
Bake 10 minutes at 400°F.
Reduce oven temp to 325°F and bake another 15-20 minutes until top os golden brown and filling is bubbly.
Serve warm with whipped cream or ice cream.
