
Butterscotch Pie

Filling:
1 1/2 c. Brown Sugar
1 1/2 c. Water
2 Tbsp. Flour
3 Tbsp. Cornstarch
2 Eggs, separated
3 Tbsp. Butter
Pinch of Salt
1 tsp. Vanilla
1/4 c. Granulated Sugar
1/4 tsp. Vanilla
Pinch of Salt
In large saucepan combine water, brown sugar, flour and cornstarch.
Stir constantly until mixture boils and thickens.
Whisk egg yolks slightly.
Stir half of hot mixture into egg yolks then add egg yolk mixture into saucepan with remaining hot mixture.
Cook another minute.
Remove from heat.
Stir in butter, pinch of salt and vanilla.
Let cool.
Pour into pie shell.
Top filling with meringue and bake 10 minutes at 400°F until golden brown.
Meringue:
Beat egg whites until stiff.
Gradually add 1/4 c. granulated sugar.
Fold in vanilla and pinch of salt.
