Carrot Cake

1 1/2 c. Vegetable Oil
2 c. Flour
1 tsp. Soda, heaping
1 tsp. Salt
2 tsp. Cinnamon
3 c. Carrots, grated
1 c. Pecans, finely chopped
4 eggs
1 tsp. Vanilla
Grate or grind carrots fine. Cut up pecans. Cream oil and sugar. Add eggs, one at a time and beat well after adding each egg. Add vanilla. Sift dry ingredients together and add alternately with carrots. Add nuts. Bake in 3 layers or large cake pan for 30-40 minutes in a 350° F oven. This cake is moist.
