Cheesy Apple Pie

Crust:
1 c. Flour
1/2 tsp. Salt
1/3 c. Shortening
1/2 c. Sharp Cheddar Cheese, finely shredded
1/8 c. Ice Water

With a pastry blender mix together 3/4 c. flour, salt and shortening.
Using a fork stir in grated cheese.
Mix remaining 1/4 c. flour with ice water.
With a fork mix in the flour and cheese mixture with the flour and water mixture.
Roll out on lightly floured surface.

Filling:
5 c. Granny Smith Apples, peeled, cored and sliced
1/2 c. Granulated Sugar
1/4 c. Brown Sugar
2 Tbsp. Flour
1 tsp. Cinnamon
1/2 tsp. Nutmeg
2 tsp. Lemon Juice
Dash of Salt

Combine all filling ingredients.
Line pie plate with crust.
Spoon filling into pie crust.
Scatter topping over filling.
Wrap strips of foil around edge of crust to prevent over browning.
Bake 40 minutes at 375°F.
Remove foil from edges.
Bake another 15-20 minutes until crust is golden brown.

Topping:
3/4 c. Granulated Sugar
3/4 c. Flour
1/4 tsp. Salt
1/3 c. Butter
1 c. Sharp Cheddar Cheese, finely shredded

In mixing bowl stir together sugar, flour and salt.
Using a pastry blender, cut in butter until mixture is crumbly.
Using a fork toss in shredded cheese.
