
Cherry Pound Cake

1/2 c. Butter, softened
3 c. Granulated Sugar
6 Eggs
1/2 tsp. Almond Extract
1/2 tsp. Vanilla
3 3/4 c. Flour
3/4 c. Milk
10 oz. Jar Maraschino Cherries, drained and chopped
1/2 c. Walnuts or Pecans, chopped
Cream together shortening, butter and sugar.
Add eggs and flavorings and beat well.
Add the flour alternately with milk starting and ending with flour.
Fold in half of cherries and nuts.
Pour into a greased and floured tube cake pan.
Bake 1 1/2 hours at 300°F.
Let cool on wire rack 10 minutes before removing from pan.
Spread icing on top and sides of cake.
Scatter remaining cherries and coconut on top of cake.
Frosting:
3 oz. Cream Cheese, softened
1/4 c. Butter, softened
2 c. Powdered Sugar
1 tsp. Vanilla
1/2 c. Coconut
Cream together cream cheese, butter and vanilla.
