
Chocolate Cashew Bread

1/2 c. Granulated Sugar
1 Tbsp. Baking Powder
1/2 tsp. Salt
1 Egg
3/4 c. Milk
1/2 c. Oil
1/2 tsp. Vanilla
3/4 c. Semi Sweet Mini Chocolate Chips
3/4 c. Cashews, chopped
Topping:
1/2 c. Semi Sweet Mini Chocolate Chips
1/2 tsp. Shortening
1/4 c. Cashews, chopped
In mixing bowl combine flour, sugar, baking powder and salt.
In another bowl whisk together egg, milk, oil and vanilla.
Pour milk mixture into flour mixture.
Stir just until moistened.
Fold in 3/4 cup of chocolate chips and cashews.
Spoon into greased 8″ x 4″ x 3″ loaf pan.
Bake 55-60 minutes at 350°F until toothpick inserted in center of loaf comes out clean.
Cool in pan 10 minutes on wire rack before removing from pan.
Let cool completely.
Melt 1/2 cup chocolate chips and shortening in small saucepan until melted and smooth.
Drizzle over top of loaf.
Sprinkle with additional chopped cashews.
