
Chocolate Cheesecake Muffins

6 oz. Cream Cheese, softened
1/4 c. Granulated Sugar
1 Egg
Dash of Salt
1/3 c. Mini Chocolate Chips
Mix together cream cheese, sugar, egg and salt.
Beat until smooth.
Stir in chocolate chips.
Muffin Batter:
1/2 c. Chocolate Chips, melted
1 1/2 c. Flour
1 tsp. Soda
1/2 tsp. Salt
1/2 c. Granulated Sugar
1/3 c. Oil
1 Egg
1 tsp. Vanilla
1 c. Water
Combine flour, soda and salt.
Set aside.
In a large bowl beat together sugar, oil, egg and vanilla.
Stir in chocolate.
Beat in flour mixture alternately with water.
Fill paper lined muffin tins one third full of batter.
Spoon a tablespoon of filling in middle of each muffin.
Cover filling with additional batter to fill two thirds full.
Bake 20-25 minutes at 350°F.
Cool slightly before removing from pans.
