
Crust:
2 1/2 c. Chocolate Cream Filled Cookies, crushed
1/3 c. Butter, melted
Combine cookie crumbs and melted butter.
Press into the bottom and slightly up the sides of a 10″ spring form pan.
Set aside.
Filling:
32 oz. Cream Cheese, softened
3 Eggs
1/2 c. Sour Cream
3/4 c. Brown Sugar
1/4 c. Espresso
1/4 c. Kahlua
1/2 tsp. Salt
1 tsp. Vanilla
Beat together all ingredients for filling until smooth.
Pour filling into prepared cookie crust.
Bake approx. 60 minutes at 350°F.
Cool completely, then chill over night before removing sides of spring form pan and serving.
Garnish with whipped cream and chocolate sauce if desired.
