Chocolate Mint Brownies

Brownies:
4 oz. Unsweetened Chocolate Squares
1 c. Unsalted Butter
1 1/2 c. Granulated Sugar
3 Eggs
1/2 tsp. Vanilla
1/2 tsp. Salt
3/4 c. Flour

Frosting:
6 Tbsp. Unsalted butter
1 tsp. Mint Extract
2-3 Drops Green Food Coloring
2 c. Powdered Sugar
2-3 Tbsp. Milk

Glaze:
2 tsp. Unsalted Butter
2 oz. Bittersweet Chocolate

Line a 9″ square pan with foil letting the foil come up and over the edge of pan. Spray foil with cooking spray. After baking and cooling lift out of pan and peel off foil before frosting and cutting into bars.

Brownies: Melt chocolate and butter in top of a double boiler. Remove from heat. Beat in sugar, eggs, vanilla and salt. Stir in flour until smooth. Spread into prepared pan. Bake 35 minutes at 350° F.

Frosting: Cream butter, extract and food coloring. Add powdered sugar 1/2 cup at a time. Add milk and beat until light and fluffy. Spread frosting over brownies.

Glaze: Combine butter and chocolate in heatproof bowl. Microwave on low for 1 minute. Repeat until chocolate melts. Drizzle glaze over frosted brownies.
Set aside for 30 minutes allowing glaze to firm up before cutting into bars.
