Citrus Biscotti

1 1/2 c. Granulated Sugar
1/2 c. Unsalted Butter, softened
1 tsp. Vanilla
4 Eggs
3 3/4 c. Flour
2 tsp. Baking Powder
Pinch of Salt
1 Tbsp. Lemon Zest
2 tsp. Orange Zest
1/2 tsp. Lime Zest
2 Tbsp. Ground Almonds

In mixing bowl cream sugar, butter and vanilla.
Add 3 of the eggs, one at a time, beating well after each addition.
Add flour, baking powder, salt and all three citrus zest.
Divide dough into four portions and shape into 2″ diameter logs.
Place on parchment lined cookie sheets.
In a small dish beat remaining egg.
Brush beaten eggs over top of logs.
Sprinkle tops with almonds.
Bake 30-35 minutes at 350°F.
Remove from oven and immediately cut logs diagonally into 3/4″ slices.
Place slices back on parchment lined cookie sheets.
Bake an additional 15-20 minutes until golden brown and dry.
Cool completely.
Store in air tight container.
