
Crust:
1 1/2 c. Flour
1/2 c. Brown Sugar
1/2 c. Butter
Mix together flour and brown sugar.
Cut in butter until crumbly.
Pat into 9″ x 13″ pan.
Bake 10 minutes at 375°F.
Pour filling over baked crust.
Bake another 20 minutes.
Drizzle with lemon frosting.
Cool completely before cutting into bars.
Filling:
2 Eggs
1 c. Brown Sugar
2 Tbsp. Flour
1/2 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Vanilla
1 1/2 c. Coconut
1 c. Walnuts or Pecans, chopped
Beat together eggs, sugar, flour, baking powder, salt and vanilla.
Fold in coconut and nuts.
Frosting:
1 c. Powdered Sugar
1 Tbsp. Butter, melted
1 Tbsp. Lemon Juice
1 Tbsp. Lemon Rind, grated
Beat all ingredients together until smooth.
