2 oz. Unsweetened Chocolate Squares, melted
1/3 c. Oil
1 c. Granulated Sugar
2 Eggs
1/2 tsp. Vanilla
3/4 c. Flour
1/2 tsp. Baking Powder
1/2 tsp. Salt
Combine melted chocolate and oil.
Mix in sugar, eggs and vanilla.
Stir in flour, baking powder and salt.
Do not over mix.
Spread in greased 8″ x 8″ pan.
Bake 25-35 minutes at 350°F.
Coconut Topping:
1/4 c. Butter, softened
1/2 c. Brown Sugar
1/2 c. Coconut
1/2 c. Walnuts or Pecans, chopped
3 Tbsp. Light Cream or Evaporated Milk
Stir ingredients together.
Spread over top of warm brownies.
Turn oven onto broil setting.
Place pan about 4″ from heat.
Broil 2-3 minutes until topping is bubbly and golden brown.
