Crackling Bread

1/2 tsp. Baking Powder
1/2 tsp. Soda
1/2 tsp. Salt
1 c. Cracklings
1 1/2 c. Buttermilk
Butter
In a mixing bowl combine cornmeal, soda, baking powder and soda.
Stir in the cracklings.
Add buttermilk, beat well.
Place a large pat of butter in a 9″ cast iron skillet.
Place skillet in oven preheated to 400°F.
When skillet is piping hot spread batter into skillet.
Bake 25 minutes.
Slice into wedges and serve immediately.
