Devil’s Food Cookies

1/2 c. Butter or Margarine
1 c. Granulated Sugar
1 Egg
1 tsp. Vanilla
1 3/4 c. Flour
1/2 c. Unsweetened Cocoa
1 1/4 tsp. Soda
1/8 tsp. Salt
1 c. Buttermilk
In mixing bowl cream butter or margarine and sugar.
Add egg and vanilla.
In separate bowl combine flour, cocoa, soda and salt.
Add dry ingredients alternately with buttermilk to creamed mixture.
Drop by teaspoonfuls onto parchment lined cookie sheets.
Bake 8-10 minutes at 375°F.
Let cool.
Spread bottom of one cookie with filling and cover with another.
Filling:
1/2 c. Butter or Margarine
1 c. Marshmallow Creme
1 1/4 c. Powdered Sugar
1 1/2 tsp. Vanilla
Cream butter or margarine.
Gradually add marshmallow creme.
Blend in vanilla and powdered sugar.
Beat to spreading consistency.
