Fresh Strawberry Pie

Filling & Glaze:
4 c. Fresh Strawberries, washed and hulled
3/4 c. Water
3/4 c. Granulated Sugar
3 Tbsp. Cornstarch
1/4 tsp. Salt
In a saucepan crush 1 cup strawberries with a potato masher.
Add water, bring to a boil.
Turn down heat and simmer for 3 minutes.
Strain juice off of strawberries.
Add enough water to juice to equal 1 cup.
Into strawberry juice slowly stir in sugar, cornstarch and salt.
Cook over medium heat, stirring constantly, until thick and clear. Approx. 3-5 minutes.
Let cool slightly.
Arrange remaining berries in baked pie shell.
Spoon slightly cooled glaze over berries.
Chill thoroughly.
Garnish with whipped cream.
Keep refrigerated.
