Gemuetlichkeit Bread

1 c. Stone Ground Whole Wheat Flour
1 c. Yellow Cornmeal
1 c. Rolled Oats
1 Tbsp. Salt
1 Tbsp. Shortening, melted
1/3 c. Molasses
3 c. Boiling Water
1 pkg. Yeast
5-6 c. Bread Flour

In a large bowl combine whole wheat flour, cornmeal, oatmeal, salt, shortening and molasses.
Pour boiling water over dry ingredients.
Stir well, let mixture cool to 105°-115°.
Sprinkle yeast into warm mixture, mix until well combined.
Add bread flour 1 cup at a time, mixing well after each addition.
Turn out onto floured surface, knead 5 minutes until smooth and elastic.
Place in a large oiled bowl and turn dough to cover completely with oil.
Cover with a damp towel.
Let rise until doubled, about 1 1/2 hour.
Punch dough down.
Divide into three pieces and shape into 3 loaves.
Place each loaf into a greased loaf pan.
Cover and let rise until double, about an hour.
Bake 50 minutes at 350°F.
