German Rhubarb Cake

Cake:
1/2 c. Shortening
1 1/2 c. Brown Sugar
1 Egg
1 tsp. Vanilla
1/2 tsp. Salt
1 tsp. Cinnamon
1/4 tsp. Allspice
1/4 tsp. Cloves
2 c. Rhubarb, finely sliced
2 c. + 2 Tbsp. Flour
1 tsp. Soda
1 c. Buttermilk

Cream shortening, sugar, egg and vanilla.
Mix in salt and spices.
Stir in rhubarb.
In a separate bowl combine flour and soda.
Add flour alternately with buttermilk to creamed mixture.
Spread into greased 9″ x 13″ pan.
Scatter topping over batter.
Bake 40 minutes at 350°F.

Topping:
1/4 c. Granulated Sugar
1/4 c. Brown Sugar
1 tsp. Cinnamon
1/2 c. Coconut
1/2 c. Walnuts or Pecans, chopped

Stir all ingredients together.
