Holiday Muffins

1 1/2 c. Margarine
1 c. Granulated Sugar
4 Eggs
1 c. Sorghum or Molasses
2 tsp. Soda
1 c. Buttermilk
4 c. Flour
3/4 tsp. Cinnamon
3/4 tsp. Ginger
1/2 c. Raisins
3/4 c. Walnuts or Pecans, chopped
Colored Sugar, optional

Cream together margarine, sugar and eggs.
Add sorghum or molasses.
Stir soda into buttermilk, set aside.
In a separate bowl mix together flour, cinnamon and ginger.
Alternately add flour and buttermilk to creamed mixture.
Fold in raisins and nuts.
Do not over mix.
Cover and refrigerate overnight.
Spoon into greased or paper lined muffin tins 2/3 full.
Sprinkle with colored sugar for a festive touch.
Bake 20 minutes at 400°F.
Batter can be kept refrigerated for two weeks
