
Irish Soda Bread

1/4 c. Granulated Sugar
1 tsp. Salt
2 tsp. Baking Powder
2 Tbsp. Caraway Seeds
1/4 c. Butter or Margarine
2 c. Raisins
1 1/3 c. Buttermilk
1 Egg
1 tsp. Soda
1 Egg Yolk, slightly beaten, or a little cream
Preheat oven 375 °F.
Mix together the flour, sugar, salt, baking powder and caraway seeds.
With a pastry blender cut in the butter until like coarse cornmeal.
Stir in raisins.
Combine buttermilk, egg and soda, stir into flour mixture until moistened.
Knead dough on a lightly floured board until smooth.
Shape into ball and place in a greased 2 qt. round casserole dish.
With sharp knife cut 4″ cross in center of loaf.
Brush with beaten egg yolk or cream.
Bake 1 hour 10 minutes or until tests done when toothpick comes out clean.
Cool before slicing.
