1/2 tsp. Almond Extract
1/3 c. Granulated Sugar
1/2 c. Cake Flour
1 tsp. Baking Powder
1/4 tsp. Salt
Beat egg yolks and almond extract until thick.
In a glass or stainless steel bowl beat egg whites until soft peaks form.
Gradually add sugar and continue beating until stiff peaks form.
Fold in egg yolks.
Sift together flour, baking powder and salt.
Fold into egg mixture.
Drop by tablespoonfuls onto parchment lined cookie sheet.
Shape into 1″x3′ fingers.
Bake 10 minutes at 350°F. until light brown.
