Lemon Blueberry Muffins

1/3 c. Granulated Sugar
2 1/2 tsp. Baking Powder
3/4 tsp. Salt
3/4 c. Milk
1 Egg, beaten
1/3 c. Oil
1/2 tsp. Lemon Extract
1 c. Blueberries
2 Tbsp. Flour
1 tsp. Grated Lemon Zest
In mixing bowl combine flour, sugar, baking powder and salt.
In separate bowl combine milk, egg, oil and lemon extract.
Stir egg mixture into dry ingredients just until moistened.
Toss together blueberries with the 2 Tbsp. flour and lemon zest.
Fold into mixture.
Spoon into greased or paper lined muffin tins 2/3 full.
Bake 20-25 minutes at 400°F.
While still warm drizzle glaze over top of muffins.
Glaze:
1/3 c. Granulated Sugar
1/4 c. Lemon Juice
Stir together until sugar is dissolved.
