Lemon Log Cookies

3/4 c. Brown Sugar
1 Egg Yolk
1 tsp. Lemon Zest
1/2 tsp. Salt
1 Tbsp. Lemon Juice
2 1/3 c. Flour
1 Egg White, slightly beaten
1 c. Pecans or Walnuts, chopped
In mixing bowl cream together butter, sugar and egg yolks.
Add flour, salt, lemon zest and lemon juice, beat well.
Roll 1 teaspoon dough onto a log.
Dip in beaten egg whites and dip in chopped nuts.
Place onto parchment lined cookie sheets.
Bake 10 minutes at 375°.
Makes approx. 4 dozen.
