
Lemon Squares

1/3 c. Flour
1/2 c. Brown Sugar
1/2 tsp. Salt
1/3 c. Butter, melted
1 Envelope Unflavored Gelatin
1/2 c. Water
4 Egg Yolks
1/2 c. Granulated Sugar
1 tsp. Grated Lemon Rind
1/2 c. Lemon Juice
4 Egg Whites
1/2 c. Granulated Sugar
Combine oatmeal, flour, brown sugar and salt.
Stir in butter.
Pour into 8″ x 8″ pan.
Bake 10 minutes at 350°F. stirring once during baking.
Cool.
Reserve 1/2 c. Crumbs.
Pat remaining crumbs evenly over bottom of pan.
Mix together gelatin and water, let sit to soften.
In a saucepan combine egg yolks, 1/2 c. sugar, lemon rind and lemon juice.
Cook, stirring constantly until mixture thickens and bubbles.
Remove from heat.
Stir in softened gelatin.
Let cool.
Beat egg whites to soft peaks.
Gradually beat in 1/2 c. sugar.
Continue beating to stiff peaks.
Fold lemon gelatin mixture into egg whites.
Pour into crumb lined pan.
Sprinkle with reserved crumbs.
Chill until firm.
Cut into squares.
