Lime-N-Coconut Cheesecake

Crust:
1 1/4 c. Graham Cracker Crumbs
1/4 c. Granulated Sugar
1/2 c. Shredded Coconut
1 tsp. Lime Zest
1/4 c. Butter, melted

Mix together cracker crumbs, sugar, coconut and lime zest.
Stir in melted butter.
Press into bottom and 1/2″ up the sides of a 10″ springform pan.
Set aside.

Filling:
4-8 oz Pkgs. Cream Cheese, softened
4 Eggs
1 3/4 c. Sweetened Cream of Coconut Milk
1/2 c. Sour Cream
2 tsp. Lime Zest
Juice from 2 Limes
1 1/2 tsp. Vanilla

Beat cream cheese on high until smooth.
Add eggs one at a time, beat well.
Add coconut milk, sour cream, lime zest, lime juice and vanilla.
Beat until creamy.
Pour filling over crust.
Bake 60-75 minutes at 325°F.
Let cool at room temp.
Cover and refrigerate overnight for best flavor.
Garnish with whipped cream and lime slices.
