Mini Fudge Pockets

1 1/2 c. Flour
1/4 tsp. Salt
1/2 c. Margarine
2 tsp. Vanilla
3 Tbsp. Water
1/2 c. Granulated Sugar
Combine flour and salt.
Using a pastry blender cut margarine into flour.
Sprinkle with mixture of water and vanilla, mixing with a fork.
Shape into a ball.
On a floured, cloth covered board roll dough to 1/16″ thickness.
Sprinkle with sugar.
Cut into 2″ squares.
Spoon 1 teaspoonful of filling onto each square.
Fold in half and seal edges.
Place on parchment lined cookie sheets.
Bake 15-20 minutes at 350°F.
Filling:
1/4 c. Butter, softened
1 Egg Yolk
1/4 c. Unsweetened Cocoa
1/2 c. Granulated Sugar
1/2 c. Pecans, finely chopped
Cream together butter, egg yolk, cocoa and sugar.
Mix in pecans.
