Mocha Meringue Pie

I Baked Pie Shell

Filling:
1/2 c. Granulated Sugar
2 Tbsp. Cornstarch
1/2 tsp. Salt
1 1/2 tsp. Instant Coffee Granules
2 c. Milk
3 Egg Yolks, slightly beaten
1 Tbsp. Butter
1 tsp. Vanilla

In saucepan mix sugar, cornstarch, salt and instant coffee.
Slowly add milk.
Cook over medium heat stirring constantly until mixtures comes to a boil.
Boil 1 minute.
Remove from heat.
Stir half of hot mixture into the beaten egg yolks.
Stir this mixture into the saucepan and boil an additional minute, stirring constantly.
Remove from heat, stir in butter and vanilla.
Pour into pie shell.
Pile chocolate meringue onto pie filling.
Bake 10-12 minutes at 400°F until meringue is browned.

Chocolate Meringue:
3 Egg Whites
1/4 tsp. Cream of Tartar
1/8 tsp. Salt
6 Tbsp. Granulated Sugar
1 Tbsp. Unsweetened Cocoa

In a glass or stainless steel bowl beat together egg whites, cream of tartar and salt until foamy.
Gradually add 4 Tbsp. sugar and continue beating until stiff peaks form.
Combine 2 Tbsp. sugar and cocoa, fold into meringue.
