Oatmeal Cream Cheese Muffins

1 c. Milk
1/2 c. Brown Sugar
1/4 c. Oil
1 Egg, beaten
1/2 tsp. Vanilla
1 1/2 c. Flour
1 1/2 tsp. Baking Powder
1/4 tsp. Salt
3 oz. Cream Cheese, softened
2 Tbsp. Strawberry, Raspberry or Grape Jelly
In mixing bowl combine oatmeal and milk and let stand 30 minutes.
Stir in brown sugar, oil, egg and vanilla.
In separate bowl combine flour, baking powder and salt.
Stir into wet ingredients just until moistened.
Spoon half of batter into 12 paper lined muffin cups.
Spoon 1 tsp. cream cheese and 1/2 tsp. jelly into center of each muffin.
Top with remaining batter.
Sprinkle topping over muffins.
Bake 20 minutes at 350°F.
Topping:
2 Tbsp. Oatmeal
2 Tbsp. Brown Sugar
Combine oatmeal and brown sugar.
