Oatmeal Wafers

1/2 c. Butter
1/2 c. Lard
1 c. Granulated Sugar
3 c. Flour
1 tsp. Soda
1 tsp. Cream of Tartar
1/2 tsp. Salt
1/2 c. Cold Water
1/4 c. Pecans, finely chopped (optional)
2 c. Quick Cooking Rolled Oats

Cream butter, lard and sugar until light and fluffy.
In separate bowl stir together flour, soda, cream of tartar and salt.
Add flour gradually to creamed mixture.
Add water as needed to hold mixture together.
Stir in rolled oats and pecans.
Turn dough out onto a lightly floured surface.
Knead gently.
Roll out dough to 1/8″ thickness.
Cut dough into 2″ circles using a biscuit cutter.
Place rounds on parchment lined cookie sheets.
Bake 8-9 minutes at 375°F.
