Oatnut Bread

2 c. Quick Cooking Rolled Oats
2 c. Hot Water, 115°-120°
1/2 c. dry Powdered Milk
3 Tbsp. Oil
1 Egg
2/3 c. Brown Sugar
1 Tbsp. Salt
1 c. Warm Water, 105°-115°
2 pkgs. Yeast
7 c. Flour
1/4 c. Pecans, chopped

In large mixing bowl pour the 2 cups hot water over rolled oats.
Add powdered milk, oil, egg, brown sugar and salt.
Mix well.
Mix in remaining warm water and yeast.
Add flour one cup at a time until stiff dough forms.
Mix in chopped pecans.
Turn out onto floured surface, knead 5 minutes until smooth and elastic.
Place in a large oiled bowl and turn dough to cover completely with oil.
Cover with a damp towel.
Let rise until doubled, about an hour.
Punch dough down.
Let rise again until almost doubled in size.
Turn dough out onto lightly floured surface.
Divide dough into thirds.
Shape into loaves.
Place into greased loaf pans.
Cover and let rise until doubled.
Bake 20-25 minutes at 350°F.
