
PB & Chocolate Cake

2 c. Flour
2 tsp. Soda
1 tsp. Baking Powder
1/2 tsp. Salt
2 c. Granulated Sugar
2/3 c. Unsweetened Cocoa
2 Eggs
1 c. Milk
2/3 c. Oil
1 tsp. Vanilla
1 c. Coffee, cooled or use 1 c. water with 1 tsp. instant coffee crystals
In a large bowl stir together flour, soda, baking powder and salt.
Stir in sugar and cocoa.
Add eggs, milk, oil and vanilla, beat for 2 minutes.
Stir in coffee.
Pour batter into a greased 9″ x 13″ pan.
Bake 35-40 minutes at 350°F.
Cool completely before frosting.
Frosting:
3 oz. Cream Cheese, softened
1/4 c. Peanut Butter
2 c. Powdered Sugar
2-3 Tbsp. Milk
1/2 tsp. Vanilla
1/4 c. Mini Chocolate Chips
Cream together cream cheese and peanut butter.
Add powdered sugar, milk and vanilla.
Beat until smooth.
Spread frosting over top of cake.
Scatter chocolate chips over top of frosting.
