Peach & Rhubarb Crisp

2 c. Rhubarb, diced
1/2 c. Granulated Sugar
3 Tbsp. Flour
1/4 tsp. Nutmeg
1/4 tsp. Cinnamon
1/4 tsp. Vanilla
Toss together all ingredients and pour into a greased 8″ x 8″ pan.
Sprinkle topping I over top of fruit.
Crumble topping II over top and bake 30-35 minutes at 375°F.
Serve warm or cold with whipped cream or ice cream.
Topping I:
1 1/2 c. Quick Cooking Oatmeal
1/3 c. Flour
1/2 c. Brown Sugar
1/3 c. Butter
Mix together until crumbly.
Topping II:
1/3 c. Brown Sugar
1/2 tsp. Cinnamon
Stir together brown sugar and cinnamon.
