Peachy Muffins

2/3 c. Oil
1 Egg
1 tsp. Vanilla
1 c. Sour Cream
2 1/4 c. Flour
1 tsp. Soda
1 tsp. Salt
1 1/2 c. Peaches, chopped, fresh or canned peaches, drained well
Mix brown sugar, oil, egg, vanilla and sour cream.
Stir in flour, soda and salt.
Fold in peaches.
Spoon into greased or paper lined muffin tins 2/3 full.
Sprinkle streusel topping on muffins.
Bake 20-25 minutes at 350°F.
Streusel Topping:
1/4 c. Flour
2 Tbsp. Granulated Sugar
2 Tbsp. Brown Sugar
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
2 Tbsp. Butter
With a fork or pastry blender combine all ingredients until crumbly.
