Pineapple Muffins

2 c. Flour
1/2 c. Brown Sugar
2 tsp. Baking Powder
1/2 tsp. Salt
1 Egg, slightly beaten
3/4 c. Milk
1/2 c. Oil
1/2 c. Crushed Pineapple, drained
1/4 c. Pecans, chopped
2 Tbsp. Granulated Sugar

Mix together flour, brown sugar, baking powder and salt.
Make a well in center of dry ingredients.
Pour in egg, milk, oil, pineapple and pecans.
Stir just until moistened.
Spoon into greased or paper lined muffin tins 2/3 full.
Sprinkle tops with granulated sugar.
Bake 18-20 minutes at 400°F.
