Raspberry Cran Apple Pinwheels

Cookie Dough:
3/4 c. Brown Sugar
1/2 c. Butter, softened
1 Egg
1/2 tsp. Vanilla
2 c. Flour
1 tsp. Lemon Zest
1/2 tsp. Soda
1/4 tsp. Salt

Cream together brown sugar, butter, egg and vanilla.
Mix in flour, lemon zest, soda and salt.
Roll dough on floured surface to 12″ x 8″ rectangle.
Spread filling to within 1″ of edges.
Roll up dough jelly roll fashion starting with long edge.
Pinch dough all along edge to seal.
Cut roll in half crosswise.
Wrap each half in plastic wrap and chill overnight.
Cut rolls into 1/2″ slices and place slices on parchment lined cookie sheets.
Bake 10-12 minutes at 375°F.

Filling:
1-10 oz. pkg. Frozen Raspberries, thawed
1/2 c. Dried Cranberries
1/2 Golden Delicious Apple, peeled and chopped
2 1/2 Tbsp. Cornstarch
1 Tbsp. Lemon Juice

Combine all filling ingredients in a saucepan.
Cook over medium heat stirring constantly until mixture comes to a boil and thickens.
Cool completely.
