Raspberry Fluff

2-10 oz. Pkgs. Frozen Raspberries, thawed
1 Envelope Unflavored Gelatin
1/4 c. Cold Water
1/2 tsp. Lemon Zest
1/2 tsp. Cinnamon
1/2 pt. Heavy Whipping Cream
1 tsp. Vanilla

Additional whipped cream for garnish, optional
Mint leaves for garnish, optional

Drain raspberries, reserving 1 cup of the juice.
In mixing bowl sprinkle gelatin over cold water and let stand 10 minutes to soften.
In saucepan combine reserved raspberry juice, cinnamon and lemon zest.
Heat to boiling. Remove from heat and stir in softened gelatin.
Chill until mixture begins to thicken.
In separate bowl whip cream and vanilla until soft peaks form.
Fold in chilled gelatin mixture and raspberries.
Spoon into parfait glasses.
Chill until set.
Garnish with whipped cream and mint leaf.
