
Red, White & Blue Muffins

1/3 c. Granulated Sugar
2 1/2 tsp. Baking Powder
3/4 tsp. Salt
3/4 c. Milk
1 Egg, beaten
1/3 c. Oil
1/2 tsp. Vanilla
4/3 c. White Chocolate Chips
1/2 c. Raspberries
1/2 c. Blueberries
2 Tbsp. Flour
1 tsp. Grated Lemon Zest
In mixing bowl combine flour, sugar, baking powder and salt.
In separate bowl combine milk, egg, oil and vanilla.
Stir egg mixture into dry ingredients just until moistened.
Stir in vanilla chips.
Toss together blueberries with the 2 Tbsp. flour and lemon zest.
Fold blueberries and raspberries into mixture.
Spoon into greased or paper lined muffin tins 2/3 full.
Sprinkle streusel topping on muffins.
Bake 20-25 minutes at 375°F.
Streusel Topping:
1/4 c. Flour
1/3 c. Granulated Sugar
1/4 tsp. Cinnamon
3Tbsp. Butter
With a fork or pastry blender combine all ingredients until crumbly.
