Rhubarb Bread

3/4 c. Oil
1 Egg
1 c. Buttermilk
1 tsp. Vanilla
2 1/2 c. Flour
1 tsp. Salt
1 tsp. Soda
1 tsp. Cinnamon
1/8 tsp. Nutmeg
2 1/2 c. Rhubarb, chopped
1/2 c. Walnuts, chopped
Beat together sugar, oil, egg, buttermilk and vanilla.
Mix in flour, salt, soda, cinnamon and nutmeg.
Fold in rhubarb and nuts.
Spoon into 2 greased loaf pans.
Bake 55-65 minutes at 325°F.
Drizzle glaze over hot loaves.
Let stand 10 minutes before removing from pan.
Glaze:
1/3 c. Granulated Sugar
2 Tbsp. Water
1 Tbsp. Lemon Juice
Stir together until sugar begins to dissolve.
