
Rocky Top Brownies

1/2 c. Butter, melted
1 c. Granulated Sugar
2 Eggs
1 tsp. Vanilla
1/2 c. Flour
1/4tsp. Salt
1/2 c. Chocolate Chips
1/2 c. Walnuts, chopped (optional)
1 c. Mini Marshmallows
Combine melted chocolate and butter
Mix in sugar, eggs and vanilla.
Stir in flour, salt and chocolate chips.
Do not over mix.
Spread in greased 8″ x 8″ pan.
Bake 25-35 minutes at 350°F.
Sprinkle marshmallows over top of hot brownies.
Spread frosting over top of marshmallows.
Let cool, cut into bars.
Frosting:
2 oz. Unsweetened Chocolate Squares
1/3 c. Milk
1/2 c. Butter
4 c. Powdered Sugar
1/2 tsp. Vanilla
Combine chocolate squares, milk and butter in heavy saucepan.
Cook over low heat until chocolate and butter are melted.
Remove from heat and transfer to a medium size mixing bowl.
Add powdered sugar and vanilla. Beat on low speed until smooth. If frosting is too stiff add milk 1 tablespoon at a time until desired consistency.
Spread over brownies.
