Soft Pretzels

2 1/2 c. Warm Water, 110°-115°
1 pkg. Yeast
2 Tbsp. Granulated Sugar
1 tsp. Salt
5-6 1/2 c. Bread Flour

Sprinkle yeast over top of warm water and let stand for 15 minutes.
Mix in sugar, salt and enough flour to make a stiff dough.
On a floured surface knead dough 5-10 minutes.
Place dough into an oiled bowl, cover and let rise 45 minutes.
Punch dough down.
Divide dough into 20 pieces.
Roll each piece into a 12″ rope and shape into a pretzel shape.
Place on a floured surface.
In a large sauce pan bring 1 qt. water to a boil.
To water add 4 tsp. soda.
Carefully slide one pretzel at a time into the boiling water and boil 1 minute each.
Remove pretzels from water and place on parchment lined cookie sheets.
Sprinkle with kosher salt.
Bake 15-20 minutes at 475°F.
Brush with melted butter.
Serve with your favorite dipping sauce.
