Southern Cornbread

1 c. Flour
1 Tbsp. Baking Powder
1/4. tsp. Soda
1/4 tsp. Salt
1 1/4 c. Buttermilk
1 Egg
1/4 c. Oil
2-4 Tbsp. Butter or Bacon Fat
In bowl mix together dry ingredients.
Stir in buttermilk, egg and oil.
Stir just until moistened.
Do not over mix.
Batter may be lumpy.
In a 9″ cast iron skillet heat butter or bacon fat until it starts to sizzle.
Tilt skillet so that butter coats bottom and sides.
Pour batter into skillet.
Bake 25 minutes at 375°F.
