Spring Fling Dessert

2 c. Ritz Cracker Crumbs
1/2 c. Butter or Margarine, melted
1/4 c. Granulated Sugar
1 Box Lemon Pudding , prepared as directed on package
4 Egg Whites
1/2 tsp. Vanilla
1 c. Granulated Sugar
1 c. Whipping Cream
1/4 c. Powdered Sugar
Zest from 1 Lemon

Stir together cracker crumbs, melted butter or margarine and 1/4 c. sugar.
Press crumbs into a 9″ x 13″ pan.
In a glass or stainless steel bowl beat egg whites until soft peaks form.
Add vanilla.
Gradually beat in 1 c. sugar and continue beating until stiff peaks form.
Spread meringue over crumb crust.
Bake 18 minutes at 350°F.
Cool completely.
Spread pudding over meringue.
Whip cream while gradually adding powdered sugar.
Beat until stiff.
Spread over top of pudding.
Cover and chill.
Garnish with lemon zest before serving.
