Sweet Potato Pie

Filling:
2 c. Sweet Potatoes, cooked, peeled and mashed
4 Tbsp. Butter, melted
3 Eggs, beaten
1 c. Granulated Sugar
1 tsp. Vanilla
1/2 tsp. Cinnamon
1 tsp. Nutmeg
1 Tbsp. Lemon Juice
1/2 c. Bourbon Whiskey
Mix together all ingredients and pour into pie shell.
Place in a 400° F. oven then immediately turn oven down to 325° F.
Bake about 45 minutes until center of pie is set.
Test by inserting a knife into center of pie
If it comes out clean the pie is done.
Delicious served with whipped cream
