
Three Wheat Bread

1/2 c. Honey
1/4 c. Molasses
3 Pkg. Yeast
1 Tbsp. Salt
1/4 c. Oil
5 c. Whole Wheat Flour
3 c. Unbleached Flour
1 c. Cracked Wheat
Mix together warm water, honey and molasses.
Sprinkle yeast on top and let stand for 5 minutes.
Add salt, oil, both kinds of flour and cracked wheat, mix well.
Turn out dough onto floured surface, knead 5 minutes until smooth and elastic.
Place in a large oiled bowl and turn dough to cover completely with oil.
Cover with plastic wrap.
Let rise until doubled, about 1 1/2 hours.
Turn out onto floured surface, knead slightly.
Divide into two pieces and shape into 2 round loaves.
Place loaves on parchment lined cookie sheet.
Cover with plastic wrap.
Let rise until doubled, about an hour.
Preheat oven to 350°F.
Bake approx. 1 hour or until loaves sound hollow when tapped on top.
Turn out onto rack to cool.
